This nice, hearty bowl of tonkotsu is calling for you in Niigata’s underground mall, Rosa.
The 伝 “to tell”” is because the owner of the restaurant wants to spread word throughout the community of the wonderful things that you can find here. He uses local ingredient- pork, leek (raised by people who have handicaps), and kakishibu (persimmon juice. used in the thick noodles that supposedly has health benefits).
He also promotes local talents. He almost always has posters up for various arts events in the city. He recently just held an exhibit of calligraphy done by someone who is wheelchair bound. This is also where the 丸 “circle” comes in. He wants to help bring the community together.
One of the ways the he does this is by holding live concerts and other types of parties regularly during the evenings. He posts information about these on his twitter, facebook, and their LINE account (@hjq4693t).
Onto the menu.
They have tonkotsu ramen with your choice of noodles (thick or thin)
and toppings (nori, chashu, leek, etc),
They also have dessert! It is shaved frozen milk that is topped with your choice of jam (from Sado) or chocolate.

They are located in the underground mall near Furumachi called Rosa. If you go down into it and walk around you should either see it or the banners/signs for it.
